2017 holidays


This is my newest Feature from my kitchen PR Bannock Factory. Ideally for a quick grab and go because i know everyone has crazy schedules and no time to cook.

We are done with the summer markets and now gearing up for the winter markets. Excited to have a meet and greet on the 19 for the 2017 winter market by Hastings race track. 

Exotic flavors


Above is my Venison sausage in a bannock bun, topped with a corn & bacon relish.! Coming to you from PR Bannock Factory on Mission Reserve on West 1st street. 

Im also doing a Venison burger with a bannock bun, smothered in a Hickory Honey BBQ sauce.

There is also going to be a bbq duck bannock pizza 👌🏿

Moving fwd


Good evening out there, it has been a few days since i last blogged. Hope all is well. So today was very awsome, i recieved my very first order of exotic meats. I have venison burgers, sausages and duck in my inventory. Next couple days will be touching/adjusting recipes for these wonderful ingredients. 

What type of exotic meats have you cooked with and tasted? What were your thoughts. I love venison, its lean and bold flavor. You do not need much added to make a dish bang. 

Very excited to play in the kitchen. 

Parmasan bannock

So i made this tonight, parmasan bannock bread to go with my spagetti, it was so yummy. A little bit of coarse salt, gratted parm. Its simular to foccia bread or flat bread.

It can to well with almost any dinner. What have you made or played with?

Salmon berry


Well being a chef, we all love working with fresh ingredients. Its a must. These were hand picked in #WestVan #SalmonBerries there are very yummy and grow wild and cant be baught in any stores i know of.  We were only lucky to get a couple hand fulls but there are flavorful and pretty site to look at. These would be great as spread, sauce for desserts, a cake, cup cake! So versitile and yummy. 

Have you had to pleasure to pick and try some of these awsome berries? If so where and what did you make?

We didnt get enough to make anything special with the ones we picked here, but im hoping to find a gold mine sometime in the summer.! 

Greek night


Friday night we made greek.! Satay pork, greek salad, roasted potatos, tziki and pita. 

This was big hit, feeding 7 kids and 2 adults. Awsome feast for fine friday night. 

The kids watched and waited impatiently for the pork tobe done. Even the dogs were crowding the cooking space.

Fresh fried bread, homade jelly.

If you guys didnt know, i have a kitchen trailer called “BannockFactory” here in north vancouver. Do several differnt things with bannock. This is one of my favorites fresh, fluffy fried bread with homade jelly. You know exactly whats put in everything. And you can adjust the flavors to your own liking. 

I remember the most i did in 1 day was about 700 pieces during culinary school when i first become a professional chef. 

How old where you when you tried making anykind of bannock for the first time and how was it??
The very first time i tried was at outdoor school in Squamish BC, it was very horrible. Bannock on a stick but imagine a 6-8 yr old putting on a stick for the first time. 😂😂 burnt one and then the other was doughy hahaha

Baked bannock loaf

Good morning out there, last night in midsts of madness getting kids ready for bed. I made them a snack and some baked bannock. 

The smell of fresh bread filled the house, so awsome. We are having it with hot cereal. 

But my favorite is with black berry jam, because my late grandmothers loved it and use to make it alot when i was your age.. Hahhaa just kidding. When i was younger though.

Bannock pizza


So last night my son asked for pizza. So i was in the kitchen and didnt want to use yeast for the kneading, rising ext…. So i used the bannock dough recipe with some tamato paste and aged cheddar. 🙌🏾
There was total of 12 kids here playing with my 5. So i made enough for half comercial baking sheet. The kids totally loved it. It is close to chicago deep dish 👌🏿

What do you think? It was decent with a salad and ice cold water
